Potato Salad is almost a required side dish at every BBQ, Potluck, or family gathering.
However, it is loaded with carbs which aren’t great for those of us on low-carb diets and keto WOE.
I was tired with being limited with my options at gatherings so I created this Low-Carb Keto Potato Salad. Same Great Taste but Without Potatoes.
Now I don’t feel left out and even chuckle at those carb-lovers who eat my low-carb potato salad recipe and can’t tell the difference!
Keto Potato Salad, Minus Potatoes
If you don’t believe potato salad can be good without potatoes, you have to try this cauliflower potato salad recipe.
The taste is identical, I kid you not.
Unfortunately, gone are the days where I can eat anything my heart desires. Now as I get older, I’m all about gluten-free, no processed sugars, and low-carb recipes.
Low Carb and Fabulous!
A few years ago I went to my doctor for my annual checkup. Or in my case, hadn’t gone in five years so I figured I’d better go check-up.
My test results weren’t great and I knew I had to make a dietary change. Not wanting to give up all my favorite foods, I was bound and determined to take my favorite recipes and make them low-carb and gluten-free without sacrificing any of the taste.
Along with macaroni salad, potato salad was the one staple I always brought to gatherings.
Good VS Bad Carbs
Not all carbs are bad. Our bodies need carbs for optimal health.
According to the The National Academies of Sciences, Engineering, and Medicine, adults should get 45 percent to 65 percent of their calories from carbohydrates, 20 percent to 35 percent from fat, and 10 percent to 35 percent from protein.

Although potatoes are a healthy food, according to the United States Department of Agriculture Agricultural Research Service USDA Food Composition Databases, they are significantly higher in carbohydrates and calories than cauliflower.
Different Types of Potato Salad
Are you a mustard type of potato salad person? Or do you prefer a more vinegar-based salad? Do you like to eat your potato salad hot or cold? There are several different variations of potato salad, yet they are still all called potato salad.

Keto Potato Salad Add-Ins
My keto potato salad recipe is a happy blend between Southern and Mustard Potato Salad, with celery, onions, and boiled eggs . You can switch things up a bit to make this recipe your own. If you would like some add-in ideas you can use
- Red Onions
- Green Onions
- Fresh Dill
- Sour Cream in Place of Mayonnaise
- Chopped Jalapenos
- Sliced Radish
- 1 Teaspoon of Organic Cane Sugar or another sweetener
- 1/4 Tsp of Cayenne Pepper
- Sweet Pickle Relish in Place of Dill Pickle Relish
- Forget the cream base altogether and toss the cauliflower with vinegar and olive oil. Add in some Dijon Mustard and Fresh Herbs. Yeah, Baby!
On the other hand, you may want to try my recipe just like it is before you start tweaking the ingredients. I bet you’ll love it just the way it is!
Keto Potato Salad Ingredients
- 1 large head of raw cauliflower-
- 2 Hard Boiled Eggs, peeled and chopped
- 1/2 Medium Onion, diced
- 3 Stalks of Celery, chopped
- 1/2 Green Bell Pepper, seeds removed and diced
- 1/2 Cup Mayonnaise
- 3 Tbsp. Dill Pickle Relish
- 2 Tbsp. Yellow Mustard
- 3 Sliced of Cooked Bacon, crumbled
- 1 tsp Sea Salt
- 1/4 tsp Black Pepper
- 1/4 tsp fresh chopped parsley
- Rinse and chop your cauliflower into one inch chunks.
- Cut your cauliflower into the same size pieces as you do your potatoes for potato salad.
- You want to cook your cauliflower until it’s done but not mushy. If you can slide a fork in with ease, it’s done. I add my chopped cauliflower to a stock pot with about 1″ of water and simmer/steam for about 10 mins.
- Drain the water from the cauliflower and let stand while you prep the rest of the ingredients.
- Add the mayonnaise, mustard, relish, salt and pepper to a mixing bowl and stir together.
- Mix in your onion, green pepper, chopped egg, and celery to your mayonnaise mixture.
- Gently fold in your cauliflower into your mixture.
- Scoop your Keto Potato salad into a bowl,
- Sprinkle with bacon crumbles, paprika, and fresh parsley.
Enjoy warm or chilled
