Roasted Asparagus with Parmesan is an easy side dish recipe that tastes great!

This recipe uses asparagus, which has a mild flavor and pairs well with cheese.

Asparagus
I honestly love this vegetable, as do all the members of my family. As a child, we had it growing wild all over our yard.
As an adult, I made sure to plant an asparagus patch whenever we moved. It’s one of the first things I plant now because it takes a couple of years to get established.
This beautiful green vegetable is rich in vitamin K, vitamin C, iron, vitamin A, calcium, and much more. Some may even refer to asparagus as a superfood.
Asparagus can be eaten raw or cooked, however, studies show that cooking asparagus helps your body absorb its nutrients better than if you were to eat it raw. Another great reason to try our recipe!

How Do You Cook Asparagus So It Is Not Soggy?
I’m not sure about you, but I’m not a fan of mushy asparagus out of a can. I like a little crunch to my fresh asparagus.
The key to crisps, and not soggy, asparagus is to cook it for a short time on high heat. The longer you cook it, the softer it gets.
Should I Soak Asparagus Before Roasting?
Unless your asparagus is covered with dirt from the garden (which isn’t a bad thing but a little crunchy), it’s not necessary to soak them.
You may want to give them a quick rinse off at best, but soaking isn’t necessary.

Should Asparagus Be Blanched Before Roasting?
To blanch something means you will drop it in boiling water for a couple of minutes then quickly remove it and place in an ice bath to halt the cooking process.
Some people like to blanch their asparagus before cooking on the grill so it doesn’t dry out during the cooking.
To each their own but I’ve found this step to be time-consuming and unnecessary with our recipe. It turns out crisp and delicious every time without being dry.
Roasted Asparagus With Parmesan
This simple roasted asparagus recipe is perfect for any meal. It’s delicious served warm or cold. You can also use fresh green beans instead of asparagus.
Ingredients:
- 1 pound asparagus
- 1 tablespoon olive oil
- 1/4 teaspoon of sea salt
- 1/4 cup shredded Parmesan cheese

Instructions for Roasted Asparagus With Parmesan
Preheat broiler or set oven to 400 F
- Cut off woody ends of asparagus, about 1/4 inch from bottom
- Lay asparagus on parchment lined baking sheet.
- Drizzle with olive oil and sprinkle with salt.
- Sprinkle Parmesan cheese over the asparagus
- Place under broiler set on high for 7 minutes.
